Las Cruces legend: September 1st is “Roberto Estrada Day”

The Doña Ana County Board of County Commissioners honored Roberto Estrada, a beloved and respected member of the community, by presenting his family with a proclamation during their regular session on August 24th We found it important to recognize him in a big way, as he did influenced so many of us, ”said County Manager Fernando Macias.

Roberto Estrada’s name is synonymous with delicious enchiladas, especially as the world record holder in the Guinness Book of Records from 2000 to 2010 for the largest enchilada in the world. His work ethic was based on a great family model in which he learned to squeeze tortillas and be generous at the age of 15.

The love and support that Roberto Estrada showed the community will live on through his family, friends and supporters. We mourn his loss, but most of all, we celebrate his life by remembering the contributions he has made as a business owner, community supporter, philanthropist, world record holder, and most importantly, a friend.

On September 1, other Mexican restaurants on Amador Avenue in Las Cruces are planning to honor Roberto Estrada’s memory with a special enchilada menu item. The restaurants are:
