ALBUQUERQUE, NM (KRQE) – Thanksgiving is only a day away and millions of Americans are preparing for their celebrations. Precision Catering’s Chef Andrew Bustos has some delicious Thanksgiving recipes that the whole family will love for more.

Green chile, ham and pepper Jack Cheese potato gratin:

Thinly sliced ​​potatoes in a creamy bechamel sauce with New Mexico Green Chili, smoked ham and Pepper Jack Cheese

  • Make bechamel sauce from sautéed onions, season with garlic, salt and pepper and simmer
    • Add the jalapeno pepper jack cheese
    • Be sure to stir the sauce thoroughly
  • Once the ingredients have been added, put the sauce in the oven for 45 minutes
  • Thinly slice the potatoes and place them in layers in a bowl
  • Add the sauce and add more potatoes in layers, as well as green chilli, smoked ham, and cheddar jack cheese
  • Bake in the oven

Stuffed butternut squash:

Whole roasted butternut squash with a chorizo ​​cornbread filling

  • Halve the butternut squash lengthways and season lightly with salt, pepper and olive oil
  • Fry at 350 degrees Fahrenheit for about 25 minutes until tender
  • Fry the chorizo ​​until brown
  • Cook your traditional cornbread filling and fold in the chorizo
  • Put the filling in butternut squash and top with cheese
  • Bake in the oven for about 7 minutes, pull out and serve
